How to measure all-purpose flour accurately
Spoon the flour into the cup and level it off. A scooped cup can weigh 140 g or more.
Spoon flour into the cup and level it with a knife. Scooping straight from the bag packs it down and can add 20–30% more flour.
For the most reliable result, weigh all-purpose flour on a digital kitchen scale: 120 g for every cup the recipe asks for.
